Did you know that the caper is not a fruit but the flower bud not yet open? And did you know that the plant produces a fruit called cucuncion?

The cucunci are the fruits of the caper and are harvested in August. After the collection, they must be washed, air dried and placed in a container covered with coarse salt so that they lose their internal humidity and bitter taste.

They must remain in salt for at least 8/10 days.

The cucunci, which are the size of small gherkins, are the ideal accompaniment to aperitifs and can be used in salads together with capers.
